Other

Suet / fat (for tallow)

USDA safe 145°F

Jevi’s notes

Liquid gold, and you’ve already paid for it. Ask the butcher to grind it (5 lb packs), render it in a slow cooker at or under 200°F for 3–5h, then strain it into jars.

From the Primal Cut Sheet post Rendering Tallow.

Thaw (fridge)

Planning estimate for a 5 lb package: ~24 hours in the refrigerator (≤40°F). USDA: large items ~24h per 5 lb; small packages often need a full day. Never thaw on the counter. Big roasts need a head start.

Methods

  • Render tallow (either)
Est. cook: ~180 min for 5 lb

Pull temperatures for braises and BBQ are texture targets and may run above the USDA minimums. Either way, meet the USDA floor and check with a thermometer, not the clock.
